Chinese Chicken Salad (Print version)
Ingredients- 2 each meaty Chicken Breasts, shredded
- 1 head Iceberg Lettuce
- 2 to 3 stalks Green Onion, slice on the diagonal using both
- the green & white parts
- 3 tbsp sliced Almonds, toasted
- 1/4 cup Cilantro, coarsely chopped (optional)
- 1 tbsp toasted Sesame Seeds, optional
- 1 can Fried Chinese Noodles
- 1/8 cup Sesame Oil
- 1/8 cup Salad Oil
- 2 tbsp Sugar
- 3 tbsp Rice Vinegar
- 1/2 tsp Salt
- 1/8 tsp Pepper
- Cook the chicken breast with a little teriyaki sauce. After the cooked chicken has cooled, tear apart the meat with your fingers into small, thin strips and set aside.
- Cut lettuce into 1/4” strips. You can also cut them length wise if they are too long to eat easily.
- Combine sliced lettuce and shredded chicken.
- In a large bowl, combine all of the ingredients for the dressing and mix well using a whisk.
- Just before serving, combine the dressing and lettuce/chicken mixture. Fold in the fried Chinese noodles carefully. Be sure not to pour the dressing directly on the noodles they will get soggy right away!
